Here are some common edible mushrooms of Colorado.

 King Bolete- There are many names for the King Bolete. These include Porcini, Cepe, and Penny Bun. The Latin name is Boletus Edulis. This mushroom lives at an elevation of 10,000 feet and is usually found underneath spruce and fir trees. It's color is red-brown and it is edible. Also, the King Bolete is a very large mushroom. Unlike most mushrooms the King Bolete stays white when it is cut. Posibly for this very reason it is one of the most hunted mushrooms of Colorado. The best time to gather it is from June-August.

 

Sarcodon- The Sarcodon grows at higher elevations in the woods. This mushroom is very common ic Colorado and is colored brown. It is edible but, it is better to eat it when it is younger. This is because it becoes infested with bugs quickly. It is supposed to taste good but, a little bitter. The Latin name for the Sarcodon is the Hydum Imbricatum.

 The Grisette- The Grisette grows up in the mountains. The spore print is white. We do not reccomend eating this mushroom as you eat at your own risk. As seen in the picture above the cap is greyish brown. Unfortunately there are many look a like mushrooms that are poisonous.

Giant Puffball - One mushroom that is unmistakable and you will most definitely never forget is the Giant Puffball as seen to the right. It has a brown spore print which is found underneath the mushroom. It is large and round, white, and edible.  It can be up to the size of a soccer ball!

Witches Butter- Directly above you see a very interesting mushroom called Witches Butter. Its Latin name is Tremella Mesenterica another name for it is Jelly fungi. Witches Butter grows on dead logs in the woods. It is edible but, not eaten often because it has a very bland flavor, and as shown above it has a yellow orange color. It is very common on old Conifer stumps/logs.

 Pinecone Amanita- The Latin name for this mushroom is Amanita Muscaria. This mushroom is found on Monarch Pass near Salida,CO. Sadly, this mushroom is poisonous. The cap is colored anywhere from white to orange. This mushroom is unique. To the direct right is a picture of The Pinecone Mushroom.

 

Lobster Mushroom- Below is the Lobster Mushroom. The Latin name for the Lobster Mushroom is Hypomyces Lactifluorum. This type of mushroom can be found under Ponderosa or Lodgepole pines or in open areas that are partialy buried by pine needles.The Lobster Mushroom is edible and can be used in Alfredo Cream sauce with pasta or it can also be used in Cream of Mushroom.

Hedgehog Mushroom- Another name for the Hedgehog Mushroom is Sweet Tooth. There are two Latin name is Hydnum Repandum or Dentium Repandum.  The Hedgehog Mushroom grows at higher elevations in Conifierous forsests. It is edible and colored orange. There are spines underneath the cap. Bugs don't care for the Hedgehog Mushroom and this mushroom is very easy to store.
