The recipe for dandelion fritters is well-known among many foragers.To create your own, follow the recipe below. Collect dandelion flowers* and pinch off the stems. In a medium-sized bowl, beat one egg. Add one cup of milk and one cup of flour with salt, pepper, honey, or any herbs you would want in your fritter batter. Gently warm olive oil in a skillet on the stove. Once warm, keep at a medium tempature. Now you have two choices. You can cook the dandelions by dipping them in the batter and frying them in the pan, or, you can throw all the dandelions into the batter and cook them like pancakes. If you choose the first method, start by dipping a flower in the batter. Make sure its entirely covered before dropping it into the pan. Repeat the process, making sure to check the flowers you put in earlier to make sure they dont burn. Once their slightly brown, turn them over and brown the other side. Keep repeating until you run out of either batter or dandelions. If you choose the second method start by dumping all of the berrys into the batter. Next, spoon batter onto the pan and cook it like a pancake, turning it over after the first side is slightly brown. Repeat. |
